Algeria is divided into 3 regions based on the landscape and climate. The Sahara desert takes up most of the country. It is hot and dry. On the Mediterranean coast, the climate is mild and is in a temperate zone. The tell is mainly 69 - 75 degrees in the summer and 50 - 53 degrees in the winter. Also in the winter, it is very humid and the houses there are not heated properly. The temperature in the steppes of the High Platueas are not very far above freezing. There is a strong dusty wind called sirocco, which sometimes reaches the coast. A small corner of the Sahara in Algeria is south of the Tropic of Cancer.

In the central portion of the country, less than 19 inches of rain falls. In the mountains, more than 78 inches of rain is recieved.

It is usually served with lamb, chicken, or fish. Bread is also an important food item in Algeria. It is used to soak up gravy or broth. It is also used to scoop food off of a plate. Most Algerians prefer a long French bread. Mechoui is another popular dish. It is made of roasted lamb that is ccoked in an outdoor spit. It is sided with dates. Tea is popular in north African countries and is served to guests visting a family.
In Niger, a problem has arisen. That problem is a groeing food crisis. Since it started, 307,000 children and families have been affected. One out of six children dont live past age three. Thirty percent of villages in agricultural and agro/pastoral areas didn’t harvest anything during the last harvest. Growing desperation is seeing people resorting to measures that will create more problems in the long term – like only eating once a day, eating ‘famine’ foods (wild leaves and berries), selling household items they need, taking children out of school, selling off livestock at reduced rates and moving to urban areas in search of work.
Tanzania has a lot of popular food dishes. They include mafe, plantains, joloff rice, fufu, and ugali. Mafe is a rice stew with peanuts, vegetables, and meat. Plantains look like large, green bananas. Joloff rice is made with tomatoes, vegetables, meats, and spices. Fufu is starchy food that consists of mashed cooked yams, cassava roots, plantains and taro roots. Ugali is cornmeal mush. The corn is pounded and cooked. It is served alongside meat dishes.

Ethiopia's climate varies by altitude, higher altitudes can reach below freezing and lower altitudes can reach 104 degrees F. During the northeast Somalian monsoon season from December to February there are moderate temperatures in the north and hot in the south. The southwest monsoon season lasts May through October. There are hot temperatures in southern Somalia and torrid in the north with irregular rainfall. Egypt is made up of mostly of hot, dry desert.
